February is American Heart Month, and I’ve partn February is American Heart Month, and I’ve partnered with @MedIQCME and Duke Health to raise awareness about atrial fibrillation (AFib), also known as irregular heartbeat which affects 12 million people.My father was diagnosed with AFib and my family has a history of this condition, so I do my best to learn as much as I can about it.

I’ve learned that when the atrium’s squeezing becomes irregular, blood doesn’t flow as smoothly through the heart and clots can form. Those clots can travel to the brain, disrupting the oxygen supply and causing a stroke. People with AFib are at approximately 5 times greater risk for stroke than those with regular heartbeats. Stroke is a leading cause of death and also of serious, long-term disability. It is essential to get to a hospital quickly if you suspect a stroke in yourself or others.Learn the acronym FAST to recognize the signs of stroke: 

F = Face. Ask the person to smile. Does one side of the face droop?

A = Arms. Ask the person to raise both arms. Does one arm drift downward? 

S = Speech. Ask the person to repeat a simple phrase. Is the speech slurred or strange?

T= Time. If you see any of these signs, call 9-1-1 right away.

    My little guy loves mac n’ cheese so I add broccoli and carrots to ensure he gets his veggies while adding a healthy boost at the same time.

    Eating fresh fruits and produce are essential for everyone no matter what age you are. Although I may not have any kids I love make healthy meals. Cauliflower is an awesome substitution for potatoes and even pizza crust. If you grate either cooked or uncooked cauliflower with a cheese grater and add an egg, cheese and oregano you can combine all of the ingredients to make a cauliflower pizza crust. You must bake the pizza crust 15-20 mins before you can add additional toppings and then pop it back in the oven and in about 10 minutes you have a cauliflower pizza. Cauliflower can also be used in place of potatoes you can mash them up and add fixings to them just like mash potatoes. Another healthy substitute is using spaghetti squash for pasta noodles. Cut the spaghetti squash into two halves and pop it in the oven. Its tasty and the same consistency as pasta noodles. All of these healthy alternatives are low carb and low calorie enjoy!

    I like to cut carrots and celery and put them in water. Keeps them fresh and easy to grab for a snack.

    My tip: To make your salad greens last longer. Wash them in a salad spinner. Drain the water out of the salad spinner – leaving just the water droplets on the sides of the salad spinner. Put the lid back on and store salad greens in the salad spinner in your fridge. Greens love cold moist air. you will be shocked at how much longer they last being store this way 🙂

    Use vegetables as a substitute for pasta noodles. Thinly sliced vegetables are a low-calorie, high fiber, gluten-free alternative to flour noodles.

    My family believes whenever you’re picking out watermelons to knock on your head. Then, knock on the watermelons. If the watermelon sounds like your head you’ve found a good one. No joke. Try it sometime.

    We make a ton of casseroles in our house. Not only are they a great way to clear the cupboards, but you can add vegetables to them and the kids don’t even notice. My son wouldn’t eat a serving of corn if I put it on his plate, but when it is mixed into a chicken enchilada casserole he inhales it. Plain veggies are too bland for kids. You have to make in appetizing.

    I buy lots of fresh blueberries in season and freeze them on a cookie sheet in a single layer and then bundle them in ziploc bags for use later, especially in my smoothies.

    Storing asperagus: Trim about an inch off the ends of asparagus, fill a wide mouth glass jar or tall container with 2 inches of cold, insert asparagus, cut stem down, into jar and put in refrigerator.

    My tip is to Store ripe tomatoes at room temperature for up to three days. The fridge will make them lose their flavor.

    An easy recipe for sun-dried tomatoes: Oven on lowest setting. Cut tomato in half or quarters, combine equal parts salt and sugar together and sprinkle on tomatoes. Bake until shriveled and slightly tough – about 12 to 14 hours. Store frozen for better color -store in fridge for quicker use.

    I cut up fruits such as Watermelon, Cantaloupe, etc. as soon as we bring it home from the store. This way when we want something to eat it is already prepared. I have noticed that when I don’t do this a lot of times it will sit in the fridge until it goes to waste.

    moist vegetables and fruits may look pretty, but you should avoid buying them at the market. they will go bad much quicker. if you can’t avoid them, make sure you dry them off before putting in the fridge.

    When I buy produce I make sure that as soon as I bring them I clean and cut them up. That way whenever I want a snack the produce, fruits and veggies, are all clean and ready to go. I find when I don’t have then all ready to eat they usually go to waste. 🙁

    I juice them! We’ll pick a fun {2-3 pieces} selection of fruit + then I get to add one veggie to the mix just to show them how yummy their fruits + veggies actually are. This also encourages them to choose what they like + how they like to have it. My 3 year old + 5 year old found that they have a love for salads with fun toppings like blueberries while my 7 year old is more on the raw veggies side + loves melons + strawberries just not at the same time. Now I have help in the produce aisles instead of protests.
