When it comes to baking, I am still getting out of my comfort zone. Over the past year or so, I’ve been doing more baking and experimenting with different recipes. I’ve found that not only is it fun, but I am kind of good at it, although I’m working on my presentation. I was recently given a challenge to come up with a recipe using International Delight Iced Coffee, and came up with a neat treat that my daughter loves—Strawberry Vanilla Coffee Muffins.
The recipe is pretty simple. You don’t have to make them from scratch, but you can if you’d like. Here are the details and recipe:
- Mix your muffin batter like you would usually do (I chose to create strawberry muffins with the help of a boxed brand muffin mix).
- After mixing all of your muffin ingredients together, simply add 2 tablespoons of International Delights Iced Coffee in Vanilla Flavor (or any other flavor that is complimentary to your muffin batter) for every six cupcakes you make.
- Bake the muffins as usual and let them cool. Then serve.
What you will get is a wonderfully flavor balanced treat that adds a little sweet kick to your muffin recipe. You can also choose to use the International Delight Iced Coffee Light to cut down on calories.
