Stuffed Jalapeño Peppers Recipe Using a Grill


It's grilling season! Give your meal some sizzle with this Stuffed Jalapeño Peppers recipe that I recreated from Cooking Light.

I saw this recipe on the Cooking Light Instagram page, and I had to try it. Only thing was/is—I don’t have a grill. Living the single woman life before my boyfriend came along, it was never something I needed. But now, of course, he wants to grill and I don’t have one. So we are going to solve that problem soon, but for now…

Let’s get back to the Grilled Stuffed Jalapeño Peppers.

The recipe looked so tasty and I wanted to try it. So, I opted for a smokeless indoor grill-top that I purchased at Target, and went about replicating the recipe using this option.

Yes, it works.

Here’s what you need to make these Grilled Stuffed Jalapeños using a Grill:

  • 4 ounces fat-free cream cheese, softened (about 1/2 cup)
  •  1 ounce extra-sharp cheddar cheese, shredded (about 1/4 cup)
  •  1/4 cup minced green onions
  •  1 teaspoon fresh lime juice
  •  1/4 teaspoon kosher salt
  •  1 small garlic clove, minced
  •  14 jalapeño peppers, halved lengthwise and seeded
  •  Cooking spray
  •  2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped seeded tomato

First, grab a mixing bowl and mix all of the ingredients (except for the jalapeño peppers). Sit the bowl to the side.

Take the jalapeño peppers (I used 14 of them) and split them in half (which will make 28 stuffed jalapeño peppers), and de-seed them.

Get a cupcake/batter scooper, and begin filling the jalapeño peppers with the mixture. If you don’t have a small scooper, you can use a spoon.

Coat your grill with cooking spray and get it hot. Then place each stuffed jalapeño pepper on the grill rack and let it sear. After about 10 minutes, you will begin seeing grill marks. Add more shredded cheese to the top letting it melt.

Remove the stuffed jalapeño peppers from the grill and place on a platter. They are ready to serve!

You will probably have some stuffing mixture left. The leftover stuffing can be used as a dip for veggies, chips, or crackers.

These Stuffed Jalapeño Peppers are super delish and can be served as a side or as an appetizer. You can also add cooked bacon to the stuffing mixture for more flavor.

Whether you are grilling inside or outside, these jalapeño peppers are oh so good.
