Side Dish: Prosciutto Wrapped Asparagus


This Prosciutto Wrapped Asparagus recipe is super easy to make and is a yummy and flavorful addition to any meal. Learn how to make it!

There seems to be this idea that asparagus is only to be enjoyed during the summer months, but I am here to tell you that couldn’t be more false.  Asparagus is perfect for all seasons, all nights of the week, and all different kinds of meals. One more fun fact: when paired with prosciutto, asparagus has never tasted better. I made prosciutto wrapped asparagus as a side dish the other night, and it was gone before the main course was even touched. Not sure if prosciutto is for you? If you love bacon, it is. Ingredients needed:
1 pound of fresh asparagus
¾ pound of prosciutto, thinly sliced
pepper
2 tablespoons of olive oil

Most prosciutto can be found in the deli section at your local market, or you might find it pre sliced and packaged in the specialty foods or even bacon section. As far as olive oil, you are free to use any type of olive oil. Just use what you have on hand. If you don’t have any, even basic vegetable oil will do. Only use fresh asparagus for this recipe as canned will be too soft to wrap.

Directions:
1. Begin by cleaning the asparagus well with cold water. Remove about ½ an inch of the ends with a knife. This is typically the white, tougher part of the asparagus that doesn’t taste very well.
2. Sprinkle the asparagus with pepper. DO NOT add salt as the meat is salty enough.
3. Take the thin slices of prosciutto and begin wrapping it around the asparagus. It will not cover the entire asparagus, so wrap in the middle as opposed to at the end. Wrap tightly. The fat in the meat will help it bind to the asparagus and you shouldn’t need to secure it.

4. Place two tablespoons of olive oil in a skillet and heat until nice and hot. You want it to sizzle!
5. Add your asparagus to the oil. They will start to sizzle and fry. Use tongs to gently turn the asparagus so the sides all cook evenly. The meat should start to brown and a light crust will develop.

6. Once all of the sides are golden, remove the asparagus from the heat and place on a paper towel to dry.
7. Serve warm!

So how can I explain these? They are crispy on the outside and tender on the inside. They are the perfect combination of an earthy vegetable and a savory and salty meat. They look fancy, but can be enjoyed with any meal. Easy to make and easy to eat, they might just become your next favorite!
